I wont' say much, just that I ate most of the last batch by myself.
1 cup oats
1 can chickpeas, drained and rinsed
1/2 cup sun butter
1 tablespoon honey
6 dates, pitted
1 tablespoon milk, or dairy free alternative
pinch of sea salt
2 tablespoon coco powder, plus more for coating
In a food processor or blender, blend oats into a fine powder.
Add chickpeas, sun butter, honey, milk, salt and dates to the food processor, keeping the oat flour inside. Combine until a thick dough forms. Remove contents from blender and place inside a large mixing bowl. Mix in the coco powder using your hands or a wooden spoon.
Roll into 1 inch round balls, coat with coco powder. Enjoy!
